Do you have a Guido membership?

If not then nothing is going to work as EU roaming only works on Guido.

If you do have a Guido membership then this issue due to the stupid way that Apple do things might be relevant:

 

iPhone abroad issue

 

You may have to be persistent and try that many times before it works.

When you get connected and calls/texts are working, if data does not work then check your internet settings and if the APN field has changed from 48months.liffeytelecom.com then edit it to change it back to that, switch airplane mode on and then off and see if data starts working.
